Soft butter cookie, with subtle almond taste. Great with coffee or tea.
Cream butter and sugar beating until mixture is light and fluffy. Add eggs and almond extract and blend well.
Mix salt and flour together and add enough flour to butter mixture to make dough.
Roll into walnut size balls & use fork to press flat on baking sheet about 1 inch apart.
Or use a Cookie Press. Take a large ball of dough and roll it in your hands or on a hard, floured surface, until its a cylinder shape that will slide easily into the cookie press. Press into desired shapes about 1 inch apart on ungreased cookie sheets.
Bake at 375 F for 7 minutes, or until edges are lightly browned.
Yield about 9 dozen.
