Serve with syrup, whipped cream, and/or fruit compote
Heat waffle iron.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
In another bowl, whisk together buttermilk, butter, egg yolk, and apple sauce.
Fold liquids into flour mixture until just combined. Do not overdo.
Beat egg white until stiff. Carefully fold egg white into the batter.
Brush or spray hot waffle iron lightly with vegetable oil and spread 1/3 cup of batter into each 4x4 in mold.
Cook waffles according to manufacturer's instructions until golden brown, about 3 minutes.
Keep warm in preheated oven at 250 degrees.
Before serving, dust with confectioners sugar.
