A family favorite for Christmas morning
Soak the raisins for 1 hour in the orange juice, then drain thoroughly.
Pour yeast into a large bowl and whisk in the milk. Fold in 3/4 cup of the flour, then spoon remaining flour on top (do not mix in). Cover with towel and let sit in warm place until cracks begin to show.
While waiting bring all other ingredients to room temperature.
Blend in the flour, and add the eggs and egg whites one at a time and incorporate completely. Mix for 6 to 8 minutes using the kneading hooks of your mixer. Gradually mix in the butter. Add salt and sugar, and completely combine; stir in raisins or candided fruit.
Cover dough lightly with flour, and with floured hands, form the dough into a ball and place it in a bowl. Cover with a towel and set to rise for 2 to 3 hours in a warm place.
Preheat oven to 400?.
Place dough on a floured surface and punch down gently, then form into a loaf. Lightly spray or wipe a 10 x 5-inch loaf pan with vegetable oil. Transfer loaf to pan. Let rise in a warm place, covered, for 1.5 hours.
Bake the load for 25 minutes, until golden and a wooden stick comes out clean.
