Jiffy Corn Casserole

This family favorite is great for holidays, potlucks, or for your everyday dinners at home. It has a soft soufflé like texture and pairs nicely with anything from chili to chicken.

Original recipe makes 6 Servings
8 OzSour cream
1 BoxJiffy corn bread mix
1 Egg; Beaten
1/2 CupButter; Melted
1 CanCream corn
1 CanCorn; Drained
Optional
1 TeaspoonGarlic powder; Blended in other ingredients
1/2 CupShredded cheddar cheese; Sprinkled on top after baking

Jiffy Corn Casserole Preparation

Preheat oven to 350 degrees.

Combine all ingredients into a medium mixing bowl. Mix until well blended; keep in mind that the mixture will not be completely smooth.

Pour mixture into a lightly greased 9 x 9 baking dish (glass is our preferred but metal works too).

Bake for an hour, let it stand for about 5 minutes before serving.

Notes

Cook for a shorter amount of time if you like a softer gooey casserole texture. If you plan on doubling the recipe, add about 10-15 minutes to the cook time.
