3 tblsp Olive Oil, Divided
3 lbs Beef Brisket; Trimmed and Coated with Salt, Oregano and Black Pepper
1 cup Low-Sodium Beef Broth
1 large Onion
1 cup Plain Yogurt
1 cup Crumbled Feta Cheese
1 cup Chopped Cucumber
1 Lemon (Minced Zest)
2 tblsp Fresh Lemon Juice
1 tblsp Minced Fresh Oregano
4 Chopped Scallions
6 6-inch Flatbread Rounds
2 cups Shredded Romaine Lettuce
1 cup Seeded, Diced Tomato

Preparation

Heat 2 tablespoons oil in a skillet over mediium-high heat. Add brisket; sear 5 minutes per side. Transfer meat to a 4 to 6 quart slow cooker. Deglaze skillet with broth, scraping up browned bits. Add broth and onion to slow cooker. Cover, cook on high-heat setting for 4-5 hours. Remove and onion to a plate; using two forks, shred meat.

Puree yogurt, feta, cucumber, scallions, zest, lemon jouce, oil, oregano, salt, and pepper in a food processor until smooth.

To serve, divide the meat and onion among flatbread rounds. Top each samdwich with romaine, tomato, and tzatziki.
