| 1 MediumCarrot; Chopped |
| 1 MediumCelery; Chopped |
| 1 CloveGarlic; Minced |
| 1/2 PoundGround pork |
| 1/2 poundGround veal |
| 1/2 PoundGround beef |
| 1/2 CupDry white wine; Or cooking wine |
| 1 14.5 oz canDiced tomatoes in their juice |
| 2 TbsTomato paste |
| 1 Bay leaf |
| 1/2 TspSalt |
| 1/4 TspPepper |
| 1/2 cupHeavy cream |
Bolognese recipe Preparation
Melt butter, sauté onion, carrot and celery. When soft add garlic and stir around for a minute. Add the meat and brown. Pour off excess fat. Add wine and boil until reduced by half. Add tomatoes, tomato paste, bay leaf, salt, and pepper. Lock the pressure cooker lid and cook over high pressure for 15 minutes. If you dont have a pressure cooker bring to a boil and simmer for 45 minutes. Add cream and cook until it is slightly thickened, about 5 minutes.
Serve over pasta.
