Beef Bourguignon Crockpot (Boom)
|6 stripsbacon; cut into 1/2 inch pieces|
|3 lbsbeef roast; cut into 1 inch cubes|
|1 largecarrot; peeled and sliced|
|1 mediumonion; sliced|
|1 cancondensed beef broth|
|1 1/2 cupsred wine|
|3 tbsptomato paste|
|2 clovesgarlic; minced|
|3/4 tspground thyme|
|1 bay leaf|
|10 smallpotatoes; cut into chunks|
|1 lbfresh mushrooms; sliced|
|1/2 smallwhite onion; peeled and diced|
Beef Bourguignon Crockpot (Boom) Preparation
Cook bacon in large skillet until crisp. Remove and drain and set aside.
Add beef cubes to skillet and brown well. Place browned beef cubes in crockpot.
Using same skillet, brown carrot and onion. Season with salt and pepper and stir in flour. Add broth, mix well, then add mixture to crockpot.
Add cooked bacon, wine, beef broth, tomato paste, garlic, bay leaf, potatoes, white onions, and mushrooms to crockpot.
Cook on LOW for 10 hours or HIGH for 6 hours.
