Dense. Hearty. No-nonsense cornbread!
Put bacon grease in a 10" iron skillet in a 400 degree oven (heats pan and melts the grease).
Mix cornmeal, egg, salt, baking soda; and buttermilk.
Take the pan out of the oven, roll the skillet to distribute the grease, then POUR the hot grease INTO the batter, mix.
Pour batter into the hot skillet.
Bake 20-25 minutes until the cornbread begins to brown and pull away from the pan.
