| 1 tbsDijon mustard |
| 3 tbsOlive oil |
| 2 tbsWhite wine vinegar |
| 3 Green onions |
| 1 Gala apple; Sliced in 8 pieces |
| 1 tbsLight brown sugar |
| 1 tbsDuck fat or butter |
| 8 cupsmixed lettuces |
Duck confit warm salad Preparation
Warm up duck leg confit in the oven at 300 degrees for 20 min
Mix dressing in a bowl (mustard, oil, vinegar and green onions)
Cook apples in duck fat for 3 min in a pan
Add sugar, maple syrup or honey, turn the apples and cook 3 more min, reserve
Deglaze the pan with the dressing prepared earlier
Mix dressing with the lettuce (mesclun)
Add Pepper
Top with apple pieces and duck
Can be served with a few raviolis or tortellinis and shredded parmesan (see picture)
Notes
You can also serve this as an appetizer for four people
