Green salad topped with caramelized apple and warm duck leg confit. Classy and delicious.
Warm up duck leg confit in the oven at 300 degrees for 20 min
Mix dressing in a bowl (mustard, oil, vinegar and green onions)
Cook apples in duck fat for 3 min in a pan
Add sugar, maple syrup or honey, turn the apples and cook 3 more min, reserve
Deglaze the pan with the dressing prepared earlier
Mix dressing with the lettuce (mesclun)
Add Pepper
Top with apple pieces and duck
Can be served with a few raviolis or tortellinis and shredded parmesan (see picture)
You can also serve this as an appetizer for four people
