Easy to make, no cook key lime pie. As well as being quick and easy it also freezes well

280g Ginger biscuits crushed
140g Butter melted
397g Condensed milk
3 Grated rind and juice of limes
280ml Double cream lightly whipped

No cook key lime pie Preparation

To make the base mix the crushed biscuits with the melted butter until well combined. Use to

One the base and sides of the prepared tin and then chill.

Meanwhile to make the filling mix the condensed milk with the lime rind and gradually whisk in the lime juice ( do not add the like juice to quickly as this may cause the mixture to curdle) carefully fold in the cream and pour on top of the biscuit base.

Chill until set (usually around 2 hours)

Slices of lemon and lime can be used to decorate if desired.

(I posted this) I really love this key lime pie, it's so easy to make and no cooking involved. Not much could go wrong with this simple recipe.
