Pecan Crusted Salmon
|2 6 ounceSalmon filets|
|1/2 cupPecans; finely chopped|
|1/3 cupSeasoned Bread Crumbs|
|2 tablespoonsParmesan cheese; grated|
|1 tablespoonFresh parsley; minced|
|1/2 cupCucumber; peeled, seeded, chopped|
|1/2 cupVanilla Yogurt|
|1/8 teaspoonGarlic powder|
Pecan Crusted Salmon Preparation
Place salmon skin side down in a greased 11x7 inch baking dish. Spread 1 tablespoon mayonnaise over each filet. Combine the pecans, bread crumbs, Parmesan, parsley and butter; spoon over salmon. Bake at 425F for 10-15 minutes or until fish flakes easily with a fork.
Meawhile, in a small bowl, combine the cucumber sauce ingredients. Serve with the salmon.
