Original recipe makes 2 Servings
2 6 ounceSalmon filets
2 tablespoonsMayonnaise
1/2 cupPecans; finely chopped
1/3 cupSeasoned Bread Crumbs
2 tablespoonsParmesan cheese; grated
1 tablespoonFresh parsley; minced
1 tablespoonButter
Cucumber Sauce
1/2 cupCucumber; peeled, seeded, chopped
1/2 cupVanilla Yogurt
1 tablespoonSalt
1/8 teaspoonGarlic powder

Pecan Crusted Salmon Preparation

Place salmon skin side down in a greased 11x7 inch baking dish. Spread 1 tablespoon mayonnaise over each filet. Combine the pecans, bread crumbs, Parmesan, parsley and butter; spoon over salmon. Bake at 425F for 10-15 minutes or until fish flakes easily with a fork.

Meawhile, in a small bowl, combine the cucumber sauce ingredients. Serve with the salmon.
