| 2 6 ounceSalmon filets |
| 2 tablespoonsMayonnaise |
| 1/2 cupPecans; finely chopped |
| 1/3 cupSeasoned Bread Crumbs |
| 2 tablespoonsParmesan cheese; grated |
| 1 tablespoonFresh parsley; minced |
| 1 tablespoonButter |
| Cucumber Sauce |
| 1/2 cupCucumber; peeled, seeded, chopped |
| 1/2 cupVanilla Yogurt |
| 1 tablespoonSalt |
| 1/8 teaspoonGarlic powder |
Pecan Crusted Salmon Preparation
Place salmon skin side down in a greased 11x7 inch baking dish. Spread 1 tablespoon mayonnaise over each filet. Combine the pecans, bread crumbs, Parmesan, parsley and butter; spoon over salmon. Bake at 425F for 10-15 minutes or until fish flakes easily with a fork.
Meawhile, in a small bowl, combine the cucumber sauce ingredients. Serve with the salmon.
