Original recipe makes 1 Servings
300-500 gramsBeef; diced
1 mediumOnions; diced
2 largeGarlic cloves; crushed
1 jarNando's coconut curry simmer sauce
2 largePotatoes; diced
1 largeCarrot; sliced
1 cupBroccoli Florets; chopped
1/2 cupLong grain rice; cooked

Beef Coconut Curry Preparation

Heat some oil in a deep saucepan. Add beef, onion & garlic and cook until meat is brown and onion & garlic are soft and fragrant. Add the simmer sauce and the remaining vegetables to the pot and cover. Cook until meat is tender (which will vary on the cut of meat), on low to medium heat and stir regularly. Meanwhile cook rice and serve together.
