when saucing, spoon a small amount on fish and let it drizzle onto plate. put some of the nuts around the plate. The cilantro and pumpkin seeds put a new twist on pesto.

Original recipe makes 4 Servings
olive oil
1/2 cuppepitas (pumpkin seeds)
1/2 cupFresh Cilantro, stems & leaves; firmly packed
1/2 tspcracked coriander seeds
1/2 garlic clove; coarsely chopped
1+ tbsfresh lime juice
4 6 ozsalmon fillets; wild
1 lime; cut into wedges

Pan Seared Salmon with Pumpkin Seed-Cilantro Pesto Preparation

Heat 1 tbs oil in skillet over med-high.Add pumpkin seeds , saute 2 min till they begin to brown and pop.Drain on paper towels.

Pulse 6 tbs pumpkin seeds, cilantro, coriander seeds, and garlic in processor till coarsely chopped. With machine running gradually add 1 tbs lime juice, 1/8 c of oil, then 1/4 c water, blend to coarse puree. Season with S, P, more lime juice if desired.

Heat 1 tbs oil in same skillet over med. Season fish. Cook till just opaque in center, 3-4 min per side. Put on places, spoon pesto over, garnish with remaining seeds, serve with lime wedge.
