| 2 poundsLamb loin chops; fat trimmed (approximately 8 chops) |
| 2 clovesGarlic; minced |
| 1 tablespoonFresh rosemary; minced |
| 1 tablespoonFresh thyme; minced |
| 1 tablespoonLemon juice; freshly squeezed |
| 1/2 teaspoonLemon zest |
| 2 teaspoonKosher Salt |
| 1/2 teaspoonBlack pepper |
| 1 tablespoonExtra virgin olive oil |
Greek Lamb Chops Preparation
Combine all ingredients in a small bowl and using a fork, mix into a paste.
using your fingers, slather the paste onto the meat, cover with saran wrap
Let meat sit at room temperature for one hour
Preheat a grill and grill the lamb on medium high heat to desired doneness.
Remove meat from grill and cover in foil. Let rest for 5 minutes.
Just prior to serving the lamb, drizzle some fresh lemon juice over the top.
Notes
This meat is awesome served with sauteed mushrooms and a fresh spinach salad with lemon vinaigrette
