Easy healthy tasty meatballs. We make these up in huge batches and freeze the cooked meatballs in single servings(8 meatballs/serving). They're a perfect protein on their own (esp if you're doing HCG diet) or they are super tasty in a pita with tzatziki.
In a large bowl, combine beef, egg white, garlic, coriander, mint, cumin, cinnamon, salt and pepper. With your hands, mix well to combine and shape into 32 1-inch balls (8 balls per serving). I've found it's very helpful to use a small cookie scoop (2 tsp size) to portion the meatballs out.
Heat a large non-stick skillet on medium. Working in batches, add meatballs and cook for 10-12 minutes, shaking skillet often to brown evenly; do not overcrowd. Meatballs are fully cooked when completely opaque in center.
Serve with couscous and tzatziki.
