Pat the potates dry, then slice them into 1/8-inch-thick rounds or 2-1/2-inch-long wedges about 1/2 inch wide. Heat the oil in your deep-fryer to 350-360 degrees F (or use a deep pot and measure the oil temperature with a deep-fryer thermometer). Place the potato rounds or wedges in the hot oil and fry until golden brown. Carefully remove the from the hot oil and drain them. Season with salt to taste and serve.
Serves 4 to 6.
