Mojito-Grilled Fish Tacos
Ingredients
Original recipe makes 4 Servings
| 2 tbsLime Juice |
| 2 tbsMint leaves; minced |
| oil, salt, sugar |
| 1 fresh jalapeno chile; seeded and minced |
| 1 lbfish, cut into 8 finger-shaped pieces; halibut, cod or snapper |
| 8 corn tortillas |
| Lime Slaw |
| 1/2 cuplow fat yogurt |
| 2 tbsFresh mint; chopped |
| 1 tbsfresh lime juice |
| 1 1/2 cupsshredded cabbage; green, not red |
Mojito-Grilled Fish Tacos Preparation
1. Combine marindate ingredients; stir. Add fish and refrigerate. Turn once.
2. Prepare grill (clean and spray with cooking oil) and keep on high. Place fish on grill or on fish grate for grill and grill till firm, opaque and lightly browned about 7 min. Turn once, carefully.
3. Prepare slaw. Combine slaw ingredients.
4. To serve, place fish on tortilla, top with 3 tbs of slaw and fold tortilla over.
