Summa Borscht (Mennonite Farmer Sausage and Potato Soup)

This is a Mennonite soup made with Mennonite farmer sausage (pork only is best) and potatoes.

| 4 litersWater |
| 1 Ham bone |
| 5 poundsMennonite Farmer Sausage; all pork is best |
| SOUP: |
| 2 cupsBeet leaves; finely chopped (optional) |
| 1/2 cupGreen onions; chopped |
| 1/3 cupDill greens; packed, or 3 T. chopped |
| 5 poundsRed potatoes; peeled and cut up in small cubes |
| Salt and pepper to taste |
| 1/4 cupSour cream |
| 3/4 cupCereal cream (1/2 and 1/2) mixed with 1/4 c. flour; shake well together |
Summa Borscht (Mennonite Farmer Sausage and Potato Soup) Preparation
Stock:
Boil ham bone and farmer sausage in water for approx. 2 hours. Cool. Take fat off the top.
Soup:
Add beet leaves, green onions, dill greens, potatoes and salt and pepper. Keep at a low boil until potatoes are cooked. Add creams after and cook until thickened.
Notes
I don't use the ham bone, just the farmer sausage. Make sure it is the Mennonite Farmer Sausage. I also don't put in the green onions as my husband doesn't like them and I don't put in the sour cream as I don't like the sour taste. My husband likes the sour taste so he just adds some vinegar to his bowl instead of the sour cream. I use 1 cup Whipping Cream instead of Cereal Cream and then I don't have to mix it with the flour. It always tastes better the next day.
