These are the best home-made Chicken Enchiladas EVER!
Remove meat from chicken and shred into bite sized pieces while doing so. Put all of your ingredients except for tortillas, queso blanco, and 1/2 of the Mexican blend cheese, into a large bowl and stir well to mix.
Spray your lasagne pan with Pam Olive Oil. Fill your tortillas with the mixture and fold like burritos. Only use 2/3 of your mixture. Save 1/3 of your mixture to spread over top of your enchiladas. You should be able to fit about 7 of them into the pan. Spread the remainder of the mixture over the enchiladas. Put slices of the queso blanco cheese on top, then sprinkle the remainder of the Mexican blend cheese on top of that. Bake at 350 for 35-45 minutes.
Be sure to spray your pan with Pam Olive Oil. It makes clean up so easy!
