Excellent version of the classic Italian dessert. (Sorry I don't have a photo; I'll take one next time I have a chance)
1. Separate egg whites and yolks. Put egg whites into a medium mixing bowl, yolks into a large mixing bowl.
2. Add sugar to the egg yolks. Mix until white (a few minutes). Add mascarpone cheese, rum, and amaretto. Mix until well combined.
3. Mix egg whites until stiff peaks form. Add to mascarpone mixture, mix well.
4. Arrange the first layer of lady fingers neatly in the bottom of a glass casserole dish.
5. Brush espresso over ladyfingers until moist.
6. Using a wire strainer, sprinkle cocoa powder over the ladyfingers.
7. Spread half of the mascarpone mixture over the ladyfingers. Shake the dish gently until the mixture seeps between the ladyfingers.
8. Repeat with a second layer.
9. Put in fridge for 12 to 24 hours.
Serve within 1-2 days. Store in fridge.
- Use an electric mixer for all mixing.
- The quantities in this recipe are intended for a 9x13 or 8x12 casserole dish. (I like to use an 8x12 dish because this recipe fills the dish all the way up to the top edge.) Since there is no heating involved, you can use any glass dish you want.
Ingredient tips:
- I recommend Belgioso brand mascarpone cheese. Whatever brand you use, it should be thick and stiff, a similar consistency to very thick cream cheese. If it's fluid enough that it runs, your tiramisu will be like tiramisu soup.
- I recommend using the crispy, biscuit-type variety of ladyfingers. They soak up the espresso wonderfully. The cake-like ladyfingers will end up being mushy.
- Avoid the temptation to increase the amount of liqueur, or your tiramisu will be too runny.
