Simple Salmon Chirashi
Original recipe makes 4 Servings
| 1 cupbrown rice |
| 1 lbwild salmon fillet; skinned, cut into 4 pieces |
| 1 cupEnglish cucumber; halved and sliced thinly |
| 1 cupAvocado; cubed |
| 1 sheetnori; torn into pieces |
| 2 green onions; sliced diagonally |
| 2 tbstoasted sesame seeds |
| 1/3 cupReduced-sodium soy sauce |
| 2 tbswasabi powder |
| 1/2 tspToasted sesame oil |
Simple Salmon Chirashi Preparation
1. Cook rice. Preheat broiler. Sprinkle salmon on both sides with salt and pepper. Broil fish till done (about 6 min for medium).
2. Divide rice among 4 serving bowls. Lay a piece of salmon on each. Top each with cucumber, avocado, nori, onions, and sesame seeds.
3. Mix wasabi, soy and oil in a small bowl and serve with the salmon and rice.
