Classic Broccoli Quiche Preparation
Prepare homemade pie crust and set aside.
Preheat oven to 350 degrees.
Saute the onion and garlic for about 3 minutes. Add the broccoli, thyme, tarragon, turmeric, salt and pepper. Cook for 10 minutes or until broccoli is soft. If it starts to look dry add a tablespoon or 2 of water.
In blend pulse the cashews into fine crumbs. Give the tofu a squeeze to remove some of the water, then crumble it into the blender along with the mustard. Process until relatively smooth, combine broccoli mixture one cup at a time until blended well. Place in 9" pie crust and bake at 350 for 40 minutes or until crust edges are lightly browned. Let quiche cool for 20 minutes before serving.
