Original recipe makes 1 Servings
4 Stalks lemongrass
1 cShallots
1/2 cGround, toasted fennel
6 Leaves kaffir lime
1/4 cGround, toasted Szechwan
1/2 cGround, toasted white
2 cSugar
1 Side salmon, skin off
1/2 cGinger, peeled
1/2 cGround, toasted coriander
1/2 cGround, toasted star anise
2 cKosher salt

Asian Gravlox with Chayote Caviar Salad Preparation

In a food processor, combine first 4 ingredients until pureed. Add spices then salt and sugar. Completely coat both sides of the salmon, tightly cover and refrigerate overnight, (minimum of 16 hours). Thoroughly rub off cure. Slice very thin on the bias.
