Original recipe makes 4
1 1/2 tsCapers; rinsed & chopped
Salt
1 Mint leaf
3/4 smOnion; minced
1 tsLemon juice
salt and pepper; to taste
1 lbasparagus; Thin

Asparagi Di Campo (Cold Marinated Asparagus) Preparation

Place onion & salt in a bowl large enough to hold the asparagus. Mix well & let steep for 30 minutes. Add the capers, lemon juice & mint leaf & marinate for at least 1 hour. Mix thoroughly from time to time. Meanwhile, bring an asparagus cooker to a boil & cook the asparagus until tender but still crisp, about 3 minutes. Drain. Toss the still warm asparagus with the marinade & add salt & pepper. Toss gently & serve.

Love the capers and lemon in this recipe. The mint was very refreshing.

It was so easy to make, and it added real nice complimentary flavors to the asparagus.

The marinade wasn't liquid at all. Maybe it wasn't supposed to be, but I think the flavor would have been absorbed better, so next time I might add some vinegar.
