Tossed Snow Peas and Zucchini
Ingredients
Original recipe makes 2 Servings
| 1 1/2 tsRed wine vinegar |
| 1 1 Inch Diagonal Pieces |
| 1 tbPine Nuts Toasted |
| 1 tbMinced Shallot |
| 2 Cherry Tomatoes, Quartered |
| 1/8 tsPepper |
| 1 smZucchini, Thinly Sliced |
| 1 tsSafflower 0R Vegetable Oil |
| 1/2 cFresh Snow Peas Cut Into |
Tossed Snow Peas and Zucchini Preparation
Place Peas in A Vegetable Steamer Over Hot Water. Cover, Steam 2 Min. OR Until Crisp Tender. Drain & Rinse Under Cold Water. Combine Peas, Zucchini, Tomatoes & Pine Nuts in A Medium Bowl. Combine Shallot, Vinegar, Oil & Pepper; Mix Well With A Wire Whisk. Pour Over Vegetables & Toss Gently To Mix Well. Cover & Chill Thoroughly. (Fat 6. Chol. 0.)
