Suggest a better descriptionHeat milk with half of the sugar and all of the butter. If you use the vanilla paste, mix it with the milk. Mix the remaining half of the sugar with the cornstarch. Beat the eggs and sift in the sugar/cornstarch mix and beat until smooth. Temper with the hot milk. Cook cream over medium heat until it thickens. Remove from the heat and add liquid vanilla, if you use it instead of the paste. Cool product in iced bain marie.
For drinkable custard, omit the cornstarch and heat all the sugar with the milk. Use only egg yolks.
