Pulled BBQ Pork

I recently tried this at a holiday pot luck and begged for the recipe! It's great on rolls, but I discovered that it's even better the next day on mashed potatoes!

Original recipe makes 1 Servings
4 poundspork loin roast; remove any casings or string
1 bell pepper; sliced
1 onion; sliced
1 apple; cored and sliced
30 ouncesSweet Baby Ray's Sweet and Spicy bbq sauce; approximate
2 to 3 smallbay leaves

Pulled BBQ Pork Preparation

Lightly spray bottom of crock pot with Pam. Sprinkle sliced peppers, onions and apple slices on the bottom. Lay pork roast on top of sliced vegetables and apple. Cover all with bbq sauce. Place bay leaves on top.

Cover and cook on high for 3 to 6 hours, or on low 4 to 8 hours - or until tender. Discard bay leaves. Lift pork roast onto platter and shred using 2 forks; return shredded meat to crockpot and stir mixture thoroughly.

Ladle over buns or mashed potatoes.

Make sure you find and discard all bay leaves before serving.

Good served with cole slaw.

Notes

I used half of a long 8 lb. pork loin roast from Costco (approximately 4 pounds).

I also used about 3/4 of a bottle of the 40 ounce size Sweet Baby Ray's Sweet and Spicy bbq sauce - can use more or less - to taste.

You may also wish to enclose bay leaves in a piece of cheesecloth for easier locating and discarding when pork is done cooking.
