Original recipe makes 4 Servings
6 ouncesTurkey kielbasa or sausage; cut into 1/4" slices
4 cupsBaby spinach
1 cupChick peas
3 Scallions; thinly sliced
1 cloveGarlic; minced
1 pinchRed pepper flakes
8 ouncesPenne or Fusilli pasta; al dente
1 teaspoonExtra virgin olive oil
Parmesan cheese grated; sprinkle on top

Kielbasa with Pasta, Chickpeas and Spinach Preparation

Cook 8 oz penne or fusilli pasta until al dente

Spray skillet with spray and add 6 ounces turkey kielbasa (we just use turkey sausage….) cut into ¼ inch slices and cook until lightly browned, about 2 minutes. Add 4 cups baby spinach, 1 cup canned chickpeas, 3 scallions thinly sliced, 1 garlic clove minced, and a pinch of red pepper flakes. Cook until spinach is wilted, about 2 minutes. Add pasta and 1 teaspoon olive oil. Divide into 4 servings and sprinkle with grated parmesan cheese.
