Pasta and sausage dish
Cook 8 oz penne or fusilli pasta until al dente
Spray skillet with spray and add 6 ounces turkey kielbasa (we just use turkey sausage….) cut into ¼ inch slices and cook until lightly browned, about 2 minutes. Add 4 cups baby spinach, 1 cup canned chickpeas, 3 scallions thinly sliced, 1 garlic clove minced, and a pinch of red pepper flakes. Cook until spinach is wilted, about 2 minutes. Add pasta and 1 teaspoon olive oil. Divide into 4 servings and sprinkle with grated parmesan cheese.
