Not a typical meatloaf but my kids love it. This is a stuffed meatloaf with Italian spices topped with marinara and mozzarella cheese! Yummmmmmm!
Preheat oven to 375 F. Mix the first nine ingredients together thoroughly. Take one half of mixture and shape into the base and then half way up of the sides of a loaf pan. If you don't have a loaf pan, just mold flat on a work surface to about 9"x5". Layer with half the sliced provolone, then the hard boiled eggs, prosciutto and a final layer of provolone. Top this with the rest of the meat mixture, making sure to securely keep all ingredients within the loaf so cheese doesn't seep out.
Place in oven on middle rack in the pan and bake for 25 minutes or until the loaf begins to brown. Drain any accumulated fat, add 1/2 cup marinara sauce and mozzarella cheese. Bake for another 25 minutes until cheese is melted and marinara is bubbling. Remove and let cool for 10 minutes before serving.
