4 filletsFish: Talapia, Snapper, Mahi; 1 - 1.5 pounds; thawed
1/4 teaspoonPepper
1 teaspoonGreek Seasoning
1 tablespoonOlive oil; Extra Virgin
1 tablespoonGarlic; minced
1/4 cupOnions; diced
1 14 oz canQuartered Artichoke Hearts; drained
1 14.5 oz canDiced Tomatoes
1 Cucumber; For Cucumber Salad
1 pintCherry tomatoes; For Cucumber Salad
1/2 cupGreek Salad Dressing; For Cucumber Salad
1/2 teaspoonGreek Seasoning; For Cucumber Salad
1/4 teaspoonKosher Salt; For Cucumber Salad
1/2 cupDiced Onions; For Cucumber Salad

Athenian Fish With Cucumbers and Tomatoes - Publix Aprons Preparation

Cooking Sequence:

1. Prepare salad and let stand - 10 minutes

2. Prepare fish and serve - 20 minutes

Athenian Fish

Prep:

1. Always check fish for bones.

Steps:

1. Preheat large saut? pan on medium-high 2-3 minutes.

2. Season both sides of fish with pepper and 1/2 teaspoon of the Greek seasoning (wash hands).

3. Place oil in pan, then add garlic and onions; cook and stir 1-2 minutes or until onions are slightly softened.

4. Add fish fillets and top with remaining ingredients (including remaining 1/2 teaspoon Greek seasoning).

5. Cover and cook 8-10 minutes, stirring vegetables once, or until fish is 145?F (or flesh separates easily).

6. Serve.

Cucumbers and Tomatoes

Prep:

1. Peel cucumber, if desired, then cut in half lengthwise.

2. Slice thinly and place in medium bowl.

3. Cut cherry tomatoes lengthwise into quarters; add to cucumbers.

Steps:

1. Stir in remaining ingredients until evenly coated.

2. Let stand 10-15 minutes to blend flavors. Stir and serve.
