Waffles
These bake up crispy on the outside and soft on the inside. These waffles are very light in texture and are excellent served with fruit (particularily strawberries) and topped with whipped cream. These are my hubby's favourite waffles.

| 1 1/3 cupsall-purpose flour |
| 2 teaspoonsbaking powder |
| 4 teaspoonsSugar |
| 1/2 teaspoonssalt |
| 2 largeEggs; separated |
| 1 1/4 cupsmilk |
| 3 tablespoonsbutter or margerine; melted |
Waffles Preparation
In a medium-size bowl, combine flour, baking powder, sugar, and salt; set aside. In another medium-size bowl, beat egg whites just until stiff, moist peaks form. In another medium-size bowl, beat yolks lightly; stir in milk and butter, and blend well. Pour liquid all at once into dry ingredients; beat until smooth. Fold in beaten whites. Bake in a waffle iron according to manufacturer's directions.
