Mini sandwiches with turkey pastrami, swiss and sauerkraut. A great hit at SuperBowl 46. Yay Giants!
Spray pan with cooking spray.Place 1 slice of cocktail rye bread down in pan. Then spread each slice of bread with Thousand island dressing. Top with shaved or sliced turkey pastrami ( or corned beef or pastrami) I used turkey pastrami because its lower in fat. Then put about a tbl. of sauerkraut on top of meat. Next top with sliced swiss cheese. Bake in oven at 375 degrees for about 10 minutes or until cheese melts and bread toasts. Depending on your oven. You might even like to broil them for a minute. This recipe makes about 24 open faced mini sandwiches. These are great appetizers to hold in your hand and eat. Enjoy, We sure Did.
