Ingredients
| 1/4 cupSugar |
| 1 tablespoonCornstarch |
| 1 beatenEgg |
| 3/4 cupPineapple juice; This is about the amount in a can of pineapple |
| 1 large canPineapple; chunks or bits |
| 1/4 poundCheese (cheddar); diced |
| 1/2 cupMarshmallows; miniature |
| 1/3 cupPecans (or other nuts); chopped |
Hazel's Pineapple Cheese Salad Preparation
Put pineapple chunks, diced cheese, and miniature marshmallows in a bowl and set aside.
Use the juice from the can of pineapple.
Put the juice, sugar, egg, and cornstarch in a pan over medium heat.
Stir constantly until mixture thickens.
Pour immediately over pineapple chunks, marshmallows, and cheese. This will slightly melt the cheese and marshmallows and blend the flavors.
Add nuts and chill
Notes
If you want it less sweet, cut the sugar.
Chopped apple, grapes, or mandarin oranges are optional additions.
