Jodie's light chicken and black bean stuffed burritos
|2 tablespoonslime juice; fresh|
|1/2 teaspoonChili powder|
|1/4 teaspoonground cumin|
|1/4 teaspoonblack pepper|
|1/8 teaspoonground red pepper|
|2 cupschicken breast; cooked, shredded|
|1/4 cupGreen onion|
|3/4 cupcanned black beans; rinsed and drained|
|4 flour tortillas; fat free|
|1/2 cupreduced calorie monterey jack cheese|
Jodie's light chicken and black bean stuffed burritos Preparation
Bring first 6 ingredients to boil in a small saucepan. Stir in chicken and onions.
Combine beans and salsa. Spoon 1/4 cup bean mixture and 1/2 cup chicken mixture down center of each tortilla; sprinkle with 2 tablespoons cheese. Roll up.
Heat large skillet over medium-high heat. Coat pan with cooking spray. Add 2 burritos. Place a heavy skillet on top of burritos, and cook 3 minutes each side. Remove from pan, and repeat with remaining tortillas.
