Easy and fluffy waffles for breakfast or as a dessert. They can easily pass for the yeasty Belgian style.
Preheat waffle iron (using 2 irons will cut prep-time).
Combine all ingredients in a medium sized mixing bowl and mix on medium speed 1 minute and then on high for 2 additional minutes until the batter is fluffy.
Bake waffles per your waffle iron's instructions.
My iron yields 10 to 11 squares (4" X 4" each).
The waffles are great cooled on a cooling rack and stored bagged or covered in the fridge for a day or two. They can be warmed in a toaster (if left plain when stored) or re-heated in an oven or toaster oven.
Serve with warmed syrups and fruits for breakfast.
For a great dessert sieve powdered sugar over waffles (hot or cooled), and then serve with small bowls or pitchers of hot or cold chocolate syrup, fresh or canned fruits or fruit compote, hot berries or hot apple sauce, and/or freshly whipped cream as a great self-serving treat anytime.
