Parmesan Roasted Potatoes
Original recipe makes 6 Servings
| 1 1/2 PoundsNew potatoes; New potatoes, unpeeled cut into 1-inch chunks |
| 3 tablespoonsOlive oil |
| 1 teaspoonKosher salt |
| 1/4 TeaspoonBlack Pepper |
| 1 Cup4 oz grated Parmesan cheese |
| 8 SprigsFresh thyme; Or use 1/8 tsp Dried thyme |
Parmesan Roasted Potatoes Preparation
heat oven to 400 degrees. in medium bowl, combine all the ingredients. transfer to a roasting pan or 9 x 13 inch baking dish. roast, stirring once, until golden brown and crisp, about 50 minutes. Serve hot or at room temperature.
I boil the potatoes first for 12-13 min. to cut down on cooking time. I have also used russet potatoes.
