|8 ouncesextra-sharp cheddar cheese; grated|
|8 ouncescolby longhorn cheese; grated|
|1 (4 oz.) jarpimento; undrained|
|1/2 teaspoongarlic powder|
|1/2 teaspoonlemon pepper|
|freshly ground black pepper; to taste|
|Tabasco sauce; to taste|
|1 1/2 teaspoonsWorcestershire sauce|
|1 1/2 teaspoonsdill pickle juice|
|1/2 cupmayonnaise (homemade, Hellmann’s or Duke's brand); up to 1 cup to achieve desired consistency|
Pimento Cheese Preparation
Mix all ingredients well. Use mayonnaise sparingly, adding more until desired consistency is achieved. Chill until ready to serve. Serve with crackers or celery sticks. Freezes well.
