Ingredients
| 8 ouncesextra-sharp cheddar cheese; grated |
| 8 ouncescolby longhorn cheese; grated |
| 1 (4 oz.) jarpimento; undrained |
| 1/4 teaspoonsalt |
| 1/2 teaspoongarlic powder |
| 1/2 teaspoonlemon pepper |
| freshly ground black pepper; to taste |
| Tabasco sauce; to taste |
| 1 1/2 teaspoonsWorcestershire sauce |
| 1 1/2 teaspoonsdill pickle juice |
| 1/2 cupmayonnaise (homemade, Hellmann’s or Duke's brand); up to 1 cup to achieve desired consistency |
Pimento Cheese Preparation
Mix all ingredients well. Use mayonnaise sparingly, adding more until desired consistency is achieved. Chill until ready to serve. Serve with crackers or celery sticks. Freezes well.
