8 ouncesextra-sharp cheddar cheese; grated
8 ouncescolby longhorn cheese; grated
1 (4 oz.) jarpimento; undrained
1/4 teaspoonsalt
1/2 teaspoongarlic powder
1/2 teaspoonlemon pepper
freshly ground black pepper; to taste
Tabasco sauce; to taste
1 1/2 teaspoonsWorcestershire sauce
1 1/2 teaspoonsdill pickle juice
1/2 cupmayonnaise (homemade, Hellmann’s or Duke's brand); up to 1 cup to achieve desired consistency

Pimento Cheese Preparation

Mix all ingredients well. Use mayonnaise sparingly, adding more until desired consistency is achieved. Chill until ready to serve. Serve with crackers or celery sticks. Freezes well.
