Baked Wild Rice Pilaf
Original recipe makes 6 Servings
| 1 1/2 cupswild rice |
| 4 (10 oz) cansbeef consomme |
| 3/4 cupgreen bell pepper; chopped |
| 1 cuponion; chopped |
| 1 cupmushrooms; sliced |
| 1/4 cup (1/2-stick)butter |
| 1 dashsalt |
| 1 dashblack pepper |
| 1 cupheavy cream |
Baked Wild Rice Pilaf Preparation
Combine rice and consomme in a saucepan set over medium-low heat and cook until all the liquid is absorbed. Melt butter in a heavy skillet, add bell pepper, onion and mushrooms and saute until tender. Add to rice and mix well. Spoon into a buttered baking dish. Bake, uncovered, in a 350 degree oven for 25 minutes.
Makes 4 to 6 servings.
