Sauteed Trout
Toast almonds in skillet over low heat, stirring.
Blend 1/2 cup of the almonds in a food processor with the flour, some salt and pepper until finely ground. Place in bowl.
Whisk egg and milk in another bowl.
Season trout with salt and pepper, dip in egg wash.
Dredge in almond flour and set aside.
Heat a couple of tablespoons of oil in a large skillet over medium high heat.
Add two fillets and cook 30 seconds.
Reduce heat to moderate and cook 1 to 2 minutes until browned.
Turn and cook until firm, 2 to 2 1/2 minutes.
Remove to platter and clean skillet.
Repeat with remaining two fillets.
Add butter to skillet and melt over moderate heat until brown, about 2 minutes.
Squeeze in lemon and thyme, cook 1 minute, pour over fillets.
Sprinkle with remaining almonds.
