| 4 SlicesDeli Turkey |
| 2 thin slicesProsciutto; Ham is an alternate |
| 1 cupSauerkraut; Rinsed and drained - pat with paper towel to remove water |
| 1 SliceReduced fat Swiss cheese |
| 1 tablespoonExtra virgin olive oil |
| 1 SprayVegetable oil cooking spray |
| Russian Dressing |
| 1/4 CupLight Miracle Whip |
| 1/4 Cuplow fat plain yogurt |
| 1/4 CupKetchup |
| 2 tablespoonsPrepared horseradish |
| 1 tablespoonWorcestershire sauce |
| 2 tablespoonsDill relish |
| 1 teaspoonLemon Juice |
| 1 tablespoonChili sauce |
| 1/2 teaspoonHungarian Paprika |
| Salt and pepper to taste |
JJ's Rachel Sandwich - Light Rueben Preparation
Russian Dressing - Mix all ingredients together in a small plastic container. This recipe makes approximately 4 servings of dressing.
Sandwich - Lightly toast bread. Rinse and drain the sauerkraut. Assemble the sandwich - Sauerkraut, Turkey, Prosciutto, Cheese on one side, and dressing on the other. Spray the vegetable oil on a frying pan. Add the olive oil for taste. Cook the sandwich on both sides until cheese is melted. I used tongs to turn it. If the bread starts to overcook or turn black, remove the sandwich and heat a minute or two in the microwave to melt the cheese. Cut in half and enjoy.
Notes
Don't burn the bread and don't be afraid to microwave it to heat the ingredients and melt the cheese. Keep an eye on it and as soon as the cheese melts, take it out.
