Not all breakfast are created equal. The Combination was created to use up whatever ingredients you may have left over from previous meals. You may find yourself leaving a little extra "left over" ingredients just for breakfast!! This is what I used...
Be sure to wash all vegetables before using them.
Slice hot dogs and dice all vegetables and put in mixing bowl, add salt and pepper. Mix together.
In a large skillet, add your vegetable oil. Turn on to medium heat.
Fry meat and veggie mix stirring frequently until potato is done. Remove from heat, top with cheese.
In separate skillet, cook eggs sunny side up or over easy.
Put sliced bread in toaster oven and toast.
Place 2 slices of toast on 3 plates, Evenly distribute meat and veggie mix onto toast, top with 2 eggs and serve.
Dice your veggies in advance to save you time in the morning!!
Add anything you have left over in the fridge. The combinations are limitless!!
Want it spicier, add crushed red pepper or Tabasco or don't core out the jalapenos!!
Any cheese is good!!
If you prefer, scramble your eggs and wrap with tortillas for breakfast on the go!!
