Italian Chopped Salad
|6 cupsromaine lettuce; chopped|
|2 cupschicken breast; cooked, shredded|
|1 mediumyellow or green bell pepper; coarsely choppd|
|1 mediumcucumber; unpeeled, chopped|
|3 plum tomaotes; chopped|
|2 ouncegenoa salami; chopped|
|1 can15 oz Chick peas; drained, rinsed|
|1/2 cupkalamata olives; halved|
|1/4 cupred onion; very thinly sliced|
|1/ cupfresh basil; torn|
|1 ounceparmesan cheese; shaved|
|3 tbspolive oil|
|3 tbspbalsamic vinegar|
|1 tspdijon mustard|
|1/8 tspblack pepper; coarse ground|
|1 clovegarlic; finey chopped|
Italian Chopped Salad Preparation
1. In large bowl, toss all salad ingredients except cheese.
2. In a small bowl, beat dressing ingredients with whisk until blended. Pour over salad mixture. Toss to coat. Top with cheese.
