Instant Potato Leek Chowder

This easy chowder comes together quickly thanks to instant mashed potato and other staples you're likely to have in your fridge or pantry. My 2 picky kids ate this up, especially when they got to pile on their own toppings!

Instant Potato Leek Chowder Preparation
Heat butter in a large Dutch oven over medium heat. Add leek, celery, and bell pepper; cook 4 minutes or until vegetables are tender, stirring frequently. Combine milk and flour in a small bowl, stirring with a whisk.
Add milk mixture to pan, stirring constantly. Stir in broth and instant potato. Add salt and pepper to taste. Simmer until heated. Top with bacon, green onions, and cheese just before serving.
