| 1 poundGround Bison; browned |
| 1 cupUncooked Rice; cook according to direction |
| 1 mediumWhite Onion; chopped |
| 1 tablespoonCumin |
| 1 canRotel |
| 1 canDiced Green Chilies |
| 1 canTomato paste |
| 1/4 bunchFresh Cilantro; chopped |
| Cayenne pepper; to taste |
| 4 clovesFresh garlic, peeled; crushed |
| 4 Green peppers; remove top |
| 1 cupshredded cheese |
Mexican Stuffed Peppers Preparation
Preheat oven to 350 degrees. Brown bison and add remaining ingredients except peppers and cheese. Keep warm. Cut tops off peppers and place on a baking stone. Stuff with mixture and top with cheese. Bake in oven for approximately 10 minutes – until cheese is melted and peppers are warm. Serves 4
