Original recipe makes 4 Servings
1 poundGround Bison; browned
1 cupUncooked Rice; cook according to direction
1 mediumWhite Onion; chopped
1 tablespoonCumin
1 canRotel
1 canDiced Green Chilies
1 canTomato paste
1/4 bunchFresh Cilantro; chopped
Cayenne pepper; to taste
4 clovesFresh garlic, peeled; crushed
4 Green peppers; remove top
1 cupshredded cheese

Mexican Stuffed Peppers Preparation

Preheat oven to 350 degrees. Brown bison and add remaining ingredients except peppers and cheese. Keep warm. Cut tops off peppers and place on a baking stone. Stuff with mixture and top with cheese. Bake in oven for approximately 10 minutes – until cheese is melted and peppers are warm. Serves 4
