Healthy cottage cheese pancakes for one

I was looking for a healthy pancake recipe and found this recipe for cottage cheese pancakes. I tweaked it to be lower in calories and yummier. It's a great high-protein breakfast!
"Just made these & they were great:) Didn't have any quick cooking oats so I used a package of maple & brown sugar high fiber instant oatmeal & it worked fine just used a little less sweetener. Kept everything else the same. Ate one pancake by itself & one with some fresh sliced peaches, yum:-) Saving this recipe to my favorites! | 70 gramscottage cheese; (non fat/ low fat/ 4%) |
| 30 gramsoatmeal; (quick cooking) |
| 1 mediumegg |
| 1 egg white |
| 1 to 2 TBSPartificial sweetener |
| 1/4 tspcinnamon; (add more if you like) |
| 1 tspvanilla extract |
| 1 TBSPwater |
Healthy cottage cheese pancakes for one Preparation
Mix all ingredients except water. Use a blender if you want smooth pancakes. I didn't blend mine and it turned out with a nice 'bite' to it.
Slowly add enough water to get a more spreadable consistency.
Heat some cooking spray in a pan on medium heat. Cook till browned on both sides. It takes a little longer to cook than regular pancakes so don't have the heat too high.
Enjoy with whatever topping you like! Fruit, yogurt, syrup...
Notes
*If you leave your batter lumpy, you will have to spread it around in the pan to get a pancake shape. Otherwise it will be a mound.
