This is the most delicious way to eat some 'greens I've ever had in all my 63 years! It is just delicious and fit for company. You won't be disappointed. This is real comfort food perfect on a cold Wintery day. Yum!"

1/2 mdOnion; coarsely chopped
1 Stalkcelery; chopped
2 tbVegetable oil
Sour cream; (garnish)
4 mdPotatoes; quartered
1 1/2 cChicken stock; or bouillon
1 Garlic; minced
2 bnKale; washed

Austrian Kale Preparation

Cut the kale leaves into 1/2-inch-wide strips. Blanch them in lightly salted boiling water for one minute. Set aside. Saute the garlic and onion in the oil until lightly browned. Add the chicken stock, potatoes, celery, and blanched kale. Simmer together until potatoes fall apart and lose their shape. Stir; season with salt and pepper, garnish with sour cream and serve. I liked it but It was a little too salty for my taste even though I added water to the dish. I added carrots as well. My husband decided that he's not a huge fan of kale after all. I will be making kale chips with my left over kale.

Very delicious and easy! Both the perfect needs for a mom. I could easily serve at a dinner party as well! Found it is not necessary to blanch kale first.

I had leftover kale from a toscano soup I made. I added mushrooms, two more cloves of garlic and a bit of sherry for more flavor. Because of that, I also added another half a cup of broth. It was very well received at my house, no leftovers!

In an effort to find more vegetables that my family liked, I made this new recipe. None of us had eaten kale before. Well! Everyone raved about this and commented on how we should have this again. It was soooo delicious. ( none but myself know how nutritious this is! ) I can't imagine anyone not liking this!
