1/2 cup Rice vinegar
1 tablespoon ginger; finely minced
1 tablespoon Sesame Oil
2 tablespoon Fresh lemon juice
Salt; to taste
2 tablespoon Dijon mustard
1 tablespoon soy sauce
1 clove garlic; finely minced
2 tablespoons Extra virgin olive oil
1 teaspoon Black pepper
1 head cabbage; chopped
1 medium hicama; thinly sliced with peeler
1 medium carrot; thinly sliced with peeler
10 ounces chicken breast; chopped
1.5 cups chow mein noodles
2 tablespoons sesame seeds

Preparation

1. Heat vinegar and sugar in small sauce pan until sugar melts

2. Whisk in ginger, sesame oil, lemon juice, salt, mustard, soy sauce, garlic, olive oil and pepper to complete dressing

3. In a large bowl, mix cabbage, hicama, green onions and carrot

4. Top with chicken and noodles

5. Dress salad or serve on the side

6. Sprinkle sesame seeds on top and serve
