Mexican Tater Tot Casserole Preparation
Preheat oven to 375 degrees. Prepare 13 x 9 baking dish with cooking spray. Cook and drain the beef, onion, and garlic. Return to pan and add the taco seasoning, corn, and beans. Cook and stir another 10 min. Set aside to cool slightly. In a large bowl combine the beef mixture, 3/4 of the cheese, and tater tots. Pour enchilada sauce in bottom of baking dish to coat dish, Add tater tot mixture. Pat down. Pour remaining enchilada sauce over tater tot layer. Bake in preheated oven for 40 minutes. Sprinkle remaining cheese over casserole and return to oven. Bake until cheese is melted and bubbly. Approx. another 5 min.
I use my home made taco seasoning which is posted on the site, I also have made this with hash browns when I have no tater tots on hand,
