3 ctomato; Coarsely chopped
1 tbDijon mustard
WHOLESOME HARVEST, GELLER
1/2 tsSalt; optional
3/4 cVidalia; Coarsely chopped
4 1/2 tbRed wine vinegar
1 cchickpeas; Cooked or canned (drained And rinsed)
1/4 cfresh basil; Chopped
tsPepper

Tomato Vidalia Onion and Chickpea Salad Preparation

In a large bowl, toss the tomato, chickpeas, onion, and basil. In a small bowl, stir together the vinegar, mustard, salt, and pepper. Pour over the salad and toss. Serve immediately or refrigerate several hours to chill and blend flavors before serving.
